Omelety goodness.
I love the variety of an egg. So simple and so delicious. My go-to egg style is either fried over easy or poached. But tonight I opted for an omelet, which you can add almost anything to. I chose to make mine with shrimp, spinach, Swiss cheese, onion, and tomato. A perfect combination, if you ask me! Now, enough about eggs! I've got homework to do!

Veggie Burgers&Sweet Potato Fries
My New Year's resolution for 2010 was to give up eating all "land meat" ie. chicken, pork, beef, lamb, rabbit, etc (I still eat any kind of seafood, but I try and limit myself to that about 1 to 2 times a week). And since that is still in full effect and I plan to keep it that way, my new diet has forced me to search for new methods of protein.
One of my favorite sources are beans [eaten in limited quantities of course] Anything from lima, edamame, soy, black, lentils, and garbanzo are all equally delicious. Black beans are perfect for making veggie burgers. They are super healthy and easy to make. Try making them at home, and keep your distance from store bought ones that have tons of preservatives. Get in the kitchen and use this appetizing recipe. Also hummus [with garbanzo beans] is really tasty and easy to make.
Here is my finished product, its kind of resembles black pudding. But its not always about "looks" right?

Another of my favorite protein rich foods are sweet potatoes. In my opinion they are best served as fries. All you need is a small amount of olive/vegetable oil, sea salt, black pepper, sweet potatoes(obviously), and an oven.

Banana Muffins

I suppose I felt like wearing a lot of blue and polka dots today. But the skirt was kind of a bad idea, simply because of how windy it was. Next time I'll be sure to remember shorts underneath :) So in lab today, we dissected owl pellets, which are regurgitated rodent bones and fur. They are super neat, and so tiny. I'm pretty sure our owl had eaten a mole. After class I took a trip to the beach with my sister who is in town visiting and my parents. There was a cool breeze which made the humidity less obvious. I sure hope fall is around the corner, my closet is better suited for cooler weather.
Here are a few photos from our garden, I was surprised to see that the roses are blooming again. Also the white cat below is the fourth and final cat you will be introduced to on this blog. I swear my family only owns four, and two of them don't even live with us. I promise we aren't one of those crazy cat hording families, even though I do love them, and wouldn't mind hording a couple hundred kittens...

Fish Tacos!
One of my absolute favorite food items to make and eat has to be fish tacos. They are super easy and super delicious. I usually use flounder or cod, but tonight I tried it with salmon. And boy, was it a success! Along with the salmon I added corn, black beans, shredded cheese, lettuce, sour cream and soy sauce dressing, and a tortilla to hold it all together. Here is the finished product:
I was watching Diners, Drive-Ins, and Dives on the Food Network and the host went to Charlotte, NC to a place called Cabo Fish Taco. The restaurant looks amazing and my next adventure will hopefully involve a trip there.

Bargaining for the future.

A day spent at the local thrift and antique stores and a quick trip to the flea mall. I love window shopping in antique stores, mostly because I can't really afford anything. My favorite section to look at is usually jewelry but as I'm getting older and thinking about having my own place I'm really enjoying looking at vintage furniture. I feel that they don't make furniture or even clothes that holds up as well as they used to. Today at Second-go-Round and Salvation Army I found these lovely bags:

And I realize I said I was going to stop shopping, but bags don't count..right? Yesterday my mom came home with a lovely surprise for me. A friend of hers at work, who knows my love for elephants found an antique powder jar for me. Complete with glass elephant on top. I'll probably use it to keep my jewelry in.
When I got home from today's shopping excursion I made dinner with my mom and sister, who is home for the weekend. We made pasta with four cheese Alfredo and mixed seafood. For dessert I had been wanting to try this new recipe that I found here. Its a toasted marshmallow milkshake. While it is a complete sugar overload it is also completely delicious. I recommend anyone with a sweet tooth to try making it, all you need is a blender, vanilla ice cream, yogurt, milk, and of course marshmallows.
